Should I remove a student after they answer?

For cold-calling, usually not — leaving everyone on the wheel means a student can be called twice, so no one mentally checks out after their turn. Turn "remove winner" on only when you specifically want every student to answer once.

How is this different from the student picker?

It's the same fair draw tuned for questioning: ask first, give think time, then spin — and it defaults to keeping names on the wheel so participation stays live rather than one-and-done.

How do I support anxious students?

Give generous thinking time before you spin, allow a "phone a friend", and let students pass to a partner. The randomness lowers pressure because being called is never personal.
